This is my recipe for a beautiful, moist banana bread made without any electric mixing equipment. All you need, aside from the ingredients are bowls, spoons and a loaf tin. I baked two loaves over the weekend to perfect the recipe which I'm entering into an online banana bread bake-off. I've never entered a cooking or baking competition before. This was fun! Here's the recipe: White Chocolate Marbled Banana Bread ------------------------------------- *1/2 cup butter (or reduced fat margarine), room temperature *1 cup white sugar *12 squares of White Lindor "Lindt" Chocolate (about 70 grams or roughly 2.5oz) *3 large eggs, room temperature *2 tsp vanilla extract (not essence) *3 ripe, medium bananas, mashed (about 1.5 cups) *2 cups plain (all purpose) flour *1 tsp baking powder *1 tsp baking soda (bicarb soda) *1/2 tsp salt *1 cup sour cream (low fat is fine) *1/4 cup cocoa powder, sifted --------------------------------- Preheat oven to 180C (or 350F) and lightly grease and flour a loaf baking tin. In a large bowl, cream together butter and sugar until light. Beat in the eggs one by one (using a wooden spoon), waiting until each has been incorporated to add the next. Beat in vanilla extract and mashed bananas. In a medium bowl, mix together the flour, baking powder, baking soda and salt. Add half of the flour mixture to the butter mix and stir to combine. Add in the sour cream, followed by the remaining flour mixture. Remove 1 cup of batter into a small bowl and stir in well the cocoa powder. Pour 2/3 of the plain batter into the prepared loaf tin, top with cocoa batter and spoon the rest of the plain batter on top. Swirl a knife through the batter gently (this will help create the marble effect in the centre of the banana bread). Add the white chocolate squares, 6 rows of 2, push the chocolate in just beneath the surface of the cake batter. Bake for 45-55 minutes, or until a toothpick or skewer inserted into the centre of the cake comes out clean and the top springs back when lightly pressed. Leave the banana bread in a place to cool for half an hour before removing from the tin. Serve plain, or dusted with icing sugar (powdered sugar).

For one of my YouTube friends (hence my username being different on the video).

This little video was made more for my personal collection (and hubby's too). We had a nice afternoon listening to singer/songwriter Bobby Flynn a former Australian Idol Finalist. Wonderful LIVE! My camera, as some of you would know.. isn't an actual video camera. We weren't sitting close to Bobby either..so this was the best we could do. It's a lovely momento nevertheless. Still photographs after the live footage are from my camera & this afternoon's concert.

This is a personal video. Not a light hearted video, but hopefully not too heavy. Part of who I am means being expressive. Our (my husbands and my) mutual friends will never even know this video exists. So it's like I'm making something private, yet anonymous while being 'live' on the internet. It will be my subscribers who mostly view this, of which I have a small group. The video is born from emotional and spiritual changes -the kind and amount only God truly knows. My husband and I are separated at the moment as some of you would know - but with a focus on reconciliation and coming together again in strength, with a new and more solid foundation -in God. The actual process and consequences of me choosing to leave the marital home has rocked my husband to the core (he told me). Both of us have hurts. To move forward and to heal, all we can do is examine our own selves no matter how much we think the other person did this or that to us. It is this honesty that we can then offer to each other. Our sacrifice. The best possible version of ourselves. From love. So was born this video. From love.

I upload all my video's here and on YouTube. In this video I refer to myself as a 'YouTuber' - I could have interchanged the word with 'vlogger' but I was too tired to make two versions.. Don't mean to offend any LV-faithful.
